These vegan granola bars are the perfect solution for an on-the-go feed or something to use between meals when you’re feeling snacky. They are loaded with nutritious nuts and seeds and are crispy and crunchy right out of the oven. This easy-to-make recipe gets about 10 times the healthy, golden, delicious salty goodness.

The base of this recipe is a blend of different nuts, seeds and flaxseed meal, which will keep your bars from falling apart while still being perfectly crunchy. Not fond of flaxseed? You can substitute equal parts chia seeds for a similar result.
Nuts are a great source of protein, healthy fats, fiber, vitamins and minerals — the complete package! You can use any combination of nuts you like in this recipe, just be sure to keep the same nut ratio and use a strong nut as the base.
Once you’ve got your mixture mixed, all that’s left to do is bake your bars. - 1/4 cup Pumpkin seeds
- 1/4 cup Flaxseed meal
- 1/4 cup Roasted pecans
- 1/2 cup erythritol
- 1 tbsp Vanilla extract
- 2 tbsp Unsweetened almond milk
- 1/4 tsp xanthan gum

1. Measure and prepare all ingredients. Preheat oven to 400F.

2. Line a baking sheet with parchment paper.

3. Add sweetener and vanilla extract to a saucepan over medium heat. Stir twice and let it sit for about 5 minutes.
